  1. 1. Wash the apples, peel them, cut them into quarters and remove the core. Grate the flesh finely.
  2. 2. Separate the eggs. Beat the egg yolks with 50 grams of sugar in a bowl until creamy. Put the egg whites with another 50 grams of sugar in a tall container and whip them into stiff peaks. Gently fold the egg white foam into the egg yolk foam.
  3. 3. Rinse the orange under hot water and dry it. Grate the peel finely. Cut the orange in half and squeeze out the juice. Measure out 50 milliliters of juice and set it aside.
  4. 4. Stir the grated apples and 2 teaspoons of orange peel into the egg mixture.
  5. 5. Mix the almonds, gingerbread spice, flour and baking powder in a bowl. Fold this dry mixture into the apple-egg mixture and stir everything well.
  6. 6. Line a baking tray with baking paper and spread the batter evenly on it. Bake the cake in the preheated oven at 180 degrees Celsius (convection: 160 degrees Celsius, gas: level 2-3) for about 25 minutes. Remove it and let it cool on a rack.
  7. 7. Soak the gelatin in cold water.
  8. 8. Stir 250 grams of sea buckthorn puree with quark, cinnamon and the remaining sugar until smooth.
  9. 9. Heat the orange juice in a small saucepan. Squeeze out the soaked gelatin and dissolve it in the warm juice while stirring. Take 1-2 tablespoons of the quark mixture and stir it into the gelatin solution before stirring everything back into the remaining quark cream.
  10. 10. Spread the cream evenly over the cooled cake and let it set. Stir the remaining sea buckthorn puree until smooth, garnish the cake with it, cut it into pieces and serve.
