🍰 Fluffy Apple and Raisin Yeast Cake

Ingredients
- 10 tbsp Milk
- Sugar (brown sugar or caster sugar)
- 20 g fresh yeast (1/4 cube)
- 400 g flour
- 0.5 tsp salt
- 2 eggs
- room-temperature butter
- butter (for the pan)
- 3 large tart apples (e.g. Boskop)
- 3 tbsp raisins
- 4 tbsp sugar (for sprinkling)
Instructions
- 1. Warm the milk slightly.
- 2. Stir two tablespoons of sugar into the lukewarm milk.
- 3. Dissolve the yeast in the milk mixture in a large bowl.
- 4. Add 300 grams of flour, a pinch of salt, and the eggs.
- 5. Mix everything with a hand mixer until you have a smooth dough.
- 6. Add only enough flour so that the dough no longer sticks to your fingers.
- 7. Shape the dough into a ball.
- 8. Cover the bowl.
- 9. Let the dough rise in a warm place for about three hours.
- 10. Wait until the dough has increased significantly in size.
- 11. Grease a springform pan well with butter.
- 12. Soak the raisins in hot water.
- 13. Divide the dough into two equal parts.
- 14. Peel the apples.
- 15. Halve the apples.
- 16. Remove the core.
- 17. Cut the flesh into small cubes.
- 18. Shape the first half of the dough into a ball.
- 19. Roll out the dough half on a lightly floured work surface.
- 20. Place the dough base in the springform pan.
- 21. Brush the dough with one to two tablespoons of butter.
- 22. Sprinkle the dough with two to three tablespoons of sugar.
- 23. Distribute the apple cubes on top of the sugar.
- 24. Remove the raisins from the water.
- 25. Let the raisins drain.
- 26. Sprinkle the raisins over the apples.
- 27. Shape the second half of the dough into a ball.
- 28. Roll out the second half of the dough as well.
- 29. Place the second dough layer on top of the filling.
- 30. Press the edges of the top dough firmly.
- 31. Cut small slits into the top.
- 32. Brush the cake with some milk or egg.
- 33. Spread some butter on the surface.
- 34. Sprinkle some sugar over it.
- 35. Bake the cake in a preheated oven at 180 degrees Celsius top/bottom heat.
- 36. Baking time is about 30 to 35 minutes.
- 37. Let the cake cool before serving.
