Ingredients
- 600 g Apples (3 Apples)
- 125 g Cane sugar
- 1 tsp Cinnamon
- 50 ml Apple juice
- 1 Lemon
- 50 g Butter (room temperature)
- 4 Eggs
- 500 g Low-fat quark
- 75 g Semolina
- 1 tsp Baking powder
Instructions
- 1. Peel the apples, cut them into quarters, remove the core, and dice the flesh into small cubes.
- 2. Put 25 grams of sugar, cinnamon, and apple juice into a pot and bring the mixture to a boil. Add the apple pieces, cover the pot, and let them simmer gently for 10 minutes until soft.
- 3. Grate the zest of one whole lemon. Take soft butter, 50 grams of sugar, and the lemon zest, and beat them with a hand mixer for about 5 minutes until very creamy.
- 4. Separate the eggs so you have distinct yolks and whites. Stir the egg yolks one by one into the butter-sugar mixture.
- 5. Stir in low-fat quark (a type of fresh cheese), semolina, and baking powder until everything is well combined.
- 6. Beat the egg whites in a second bowl until stiff and foamy. Slowly pour in the remaining sugar and continue beating until the whites form stiff peaks. Gently fold this meringue into the quark mixture.
- 7. Grease a baking dish lightly if necessary. Put the stewed apples into the dish or distribute them among 6 ovenproof glasses or cups. Pour the quark mixture over them.
- 8. Bake the bake in the preheated oven at 180 degrees Celsius (160 degrees Celsius for fan-assisted ovens, gas mark 2 to 3) on the middle rack for 30 to 35 minutes.
