  1. 1. Peel the apples, cut them into quarters, remove the core, and dice the flesh into small cubes.
  2. 2. Put 25 grams of sugar, cinnamon, and apple juice into a pot and bring the mixture to a boil. Add the apple pieces, cover the pot, and let them simmer gently for 10 minutes until soft.
  3. 3. Grate the zest of one whole lemon. Take soft butter, 50 grams of sugar, and the lemon zest, and beat them with a hand mixer for about 5 minutes until very creamy.
  4. 4. Separate the eggs so you have distinct yolks and whites. Stir the egg yolks one by one into the butter-sugar mixture.
  5. 5. Stir in low-fat quark (a type of fresh cheese), semolina, and baking powder until everything is well combined.
  6. 6. Beat the egg whites in a second bowl until stiff and foamy. Slowly pour in the remaining sugar and continue beating until the whites form stiff peaks. Gently fold this meringue into the quark mixture.
  7. 7. Grease a baking dish lightly if necessary. Put the stewed apples into the dish or distribute them among 6 ovenproof glasses or cups. Pour the quark mixture over them.
  8. 8. Bake the bake in the preheated oven at 180 degrees Celsius (160 degrees Celsius for fan-assisted ovens, gas mark 2 to 3) on the middle rack for 30 to 35 minutes.
