  1. 1. Whisk the eggs with a pinch of salt, 2 tablespoons of coconut blossom sugar, and the milk until smooth.
  2. 2. Stir in the flour thoroughly until the batter is homogeneous.
  3. 3. Let the batter rest for 15 minutes.
  4. 4. Peel the apples and remove the core using a cutter.
  5. 5. Slice them thinly.
  6. 6. Squeeze the lemon.
  7. 7. Drizzle the apple slices with the juice.
  8. 8. Heat some butter in a pan.
  9. 9. Pour in 1/4 of the batter.
  10. 10. Distribute 1/4 of the apple slices on top.
  11. 11. Fry the pancake at medium heat for about 3 to 4 minutes until golden brown.
  12. 12. Place the flat side of the plate on the pancake.
  13. 13. Hold it firmly, and turn the pan and plate over.
  14. 14. The pancake now rests on the plate with the cooked side facing up.
  15. 15. Add some butter to the pan.
  16. 16. Slide the pancake from the plate back into the pan.
  17. 17. Fry it briefly.
  18. 18. Keep the finished pancakes warm in the preheated oven at 100 °C (convection: 80 °C; gas: setting 1).
  19. 19. Mix the cinnamon with the remaining coconut blossom sugar.
  20. 20. Sprinkle the pancakes with it before serving.
