🍽️ Cinnamon Apple Pancakes

Ingredients
- 6 Eggs
- Salt
- 3 tbsp Coconut blossom sugar
- 500 ml Milk (3.5% fat)
- 250 g Whole wheat flour
- 500 g Apples
- 0.5 Lemon
- 4 tbsp Butter (for frying)
- Cinnamon (for sprinkling)
Instructions
- 1. Whisk the eggs with a pinch of salt, 2 tablespoons of coconut blossom sugar, and the milk until smooth.
- 2. Stir in the flour thoroughly until the batter is homogeneous.
- 3. Let the batter rest for 15 minutes.
- 4. Peel the apples and remove the core using a cutter.
- 5. Slice them thinly.
- 6. Squeeze the lemon.
- 7. Drizzle the apple slices with the juice.
- 8. Heat some butter in a pan.
- 9. Pour in 1/4 of the batter.
- 10. Distribute 1/4 of the apple slices on top.
- 11. Fry the pancake at medium heat for about 3 to 4 minutes until golden brown.
- 12. Place the flat side of the plate on the pancake.
- 13. Hold it firmly, and turn the pan and plate over.
- 14. The pancake now rests on the plate with the cooked side facing up.
- 15. Add some butter to the pan.
- 16. Slide the pancake from the plate back into the pan.
- 17. Fry it briefly.
- 18. Keep the finished pancakes warm in the preheated oven at 100 °C (convection: 80 °C; gas: setting 1).
- 19. Mix the cinnamon with the remaining coconut blossom sugar.
- 20. Sprinkle the pancakes with it before serving.
