🍳 Breads with Apple and Marjoram

Ingredients
- 300 g mealy-cooking potatoes
- 4 sprigs marjoram
- 70 g small leek stalk (1 small leek stalk)
- 150 g apples (1 apple)
- 1 tsp germ oil
- salt
- pepper
- 100 g spelt wholemeal bread (2 slices)
Instructions
- 1. Wash the potatoes and boil them with the skin in boiling water for 20 to 30 minutes, depending on size.
- 2. Rinse the marjoram and shake it dry. Pluck off the leaves, set some aside, and chop the rest finely.
- 3. Halve the leek lengthwise, wash it, remove the tough parts, and cut it into approx. 1 cm wide strips (only the white part).
- 4. Wash the apple, dry it, and cut it into approx. 1 cm thick slices around the core. Dice the apple slices finely.
- 5. Heat the oil in a non-stick pan. Add the leek and simmer covered on low heat for approx. 6 minutes.
- 6. Add the apple cubes and chopped marjoram and simmer for 1 minute. Season with salt and pepper.
- 7. Drain the potatoes, shock them under cold water, peel them, and press them while still warm through a potato ricer into a bowl.
- 8. Stir the apple-leek mixture well into the potatoes, salt, pepper, and let cool. Spread the bread slices with the mixture, garnish with the marjoram leaves, and serve.
