🍽️ Crispy Apple Fritters

Ingredients
- 500 g flour
- 1 cube yeast (42 g)
- 0.25 l lukewarm milk
- 1 egg
- 2 egg yolks
- 4 tbsp apple syrup
- salt
- 50 g butter
- 75 g raisins
- Calvados
- clarified butter (for frying)
Instructions
- 1. Put the flour into a large bowl.
- 2. Sift the flour through a sieve to make it airy.
- 3. Make a small well in the center of the flour.
- 4. Crumble the yeast directly into this well.
- 5. Take a small splash of the milk and some flour from the edge.
- 6. Stir these together to make a small pre-dough.
- 7. Cover the bowl.
- 8. Let the pre-dough rise in a warm place for 15 minutes.
- 9. Add the remaining milk, apple syrup, egg, egg yolk, and a pinch of salt.
- 10. Place the butter in small cubes on top of the dough.
- 11. Knead everything into a smooth dough.
- 12. Knead until small bubbles form in the dough.
- 13. If the dough is too sticky, knein in a little more flour.
- 14. Cover the dough again.
- 15. Let the dough rise for another 30 minutes.
- 16. Rinse the raisins under hot water.
- 17. Pat the raisins dry.
- 18. Pour Calvados over the raisins.
- 19. Heat the frying oil to 170 degrees.
- 20. Knead the dough once more briefly.
- 21. Mix the raisins into the dough.
- 22. Use two spoons to form small balls from the dough.
- 23. Fry the fritters in batches in the hot oil.
- 24. Fry them until golden brown.
- 25. Place the finished fritters on kitchen paper.
- 26. Let the excess oil drain off.
