  1. 1. Wash the potatoes thoroughly.
  2. 2. Peel the potatoes.
  3. 3. Grate the potatoes finely.
  4. 4. Squeeze the moisture out of the potatoes.
  5. 5. Mix the potatoes immediately with the sour cream.
  6. 6. Peel the apples.
  7. 7. Remove the core of the apples.
  8. 8. Grate the apple flesh finely.
  9. 9. Optionally save a few apple slices for decoration.
  10. 10. Squeeze the moisture out of the grated apples.
  11. 11. Add the apples to the potato-cream mixture.
  12. 12. Add an egg.
  13. 13. Add starch.
  14. 14. Add semolina.
  15. 15. Mix everything well.
  16. 16. Season the mixture with salt.
  17. 17. Heat plenty of ghee in a heavy pan.
  18. 18. Drop two tablespoons of the mixture into the hot fat.
  19. 19. Fry the small pancakes until golden brown.
  20. 20. Turn the pancakes while frying.
  21. 21. Keep the pancakes half-submerged in the oil while frying.
  22. 22. Fry the remaining apple slices in the fat if you wish.
  23. 23. Place the finished pancakes on kitchen paper.
  24. 24. Let the fat drain.
  25. 25. Serve the pancakes fresh and hot.
