🍽️ Crispy Apple Potato Pancakes

Ingredients
- 800 g floury potatoes
- 1 tbsp sour cream
- 300 g apples
- 1 egg
- 1 tbsp cornstarch
- 2 tbsp semolina
- salt
- ghee (for frying)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Peel the potatoes.
- 3. Grate the potatoes finely.
- 4. Squeeze the moisture out of the potatoes.
- 5. Mix the potatoes immediately with the sour cream.
- 6. Peel the apples.
- 7. Remove the core of the apples.
- 8. Grate the apple flesh finely.
- 9. Optionally save a few apple slices for decoration.
- 10. Squeeze the moisture out of the grated apples.
- 11. Add the apples to the potato-cream mixture.
- 12. Add an egg.
- 13. Add starch.
- 14. Add semolina.
- 15. Mix everything well.
- 16. Season the mixture with salt.
- 17. Heat plenty of ghee in a heavy pan.
- 18. Drop two tablespoons of the mixture into the hot fat.
- 19. Fry the small pancakes until golden brown.
- 20. Turn the pancakes while frying.
- 21. Keep the pancakes half-submerged in the oil while frying.
- 22. Fry the remaining apple slices in the fat if you wish.
- 23. Place the finished pancakes on kitchen paper.
- 24. Let the fat drain.
- 25. Serve the pancakes fresh and hot.
