  1. 1. Peel the apple.
  2. 2. Cut the apple into four quarters.
  3. 3. Remove the core from the apple pieces.
  4. 4. Dice the flesh into small cubes.
  5. 5. Add the lemon juice to the apple cubes and mix everything.
  6. 6. Remove two tablespoons of the apple-lemon mixture and set it aside.
  7. 7. Peel the banana.
  8. 8. Dice the banana.
  9. 9. Peel the cucumber.
  10. 10. Cut the cucumber in half lengthwise.
  11. 11. Scoop out the seeds from the cucumber halves.
  12. 12. Dice about two centimeters of the cucumber into small cubes.
  13. 13. Add the cucumber cubes to the remaining apple pieces.
  14. 14. Add the rest of the cucumber to the blender.
  15. 15. Add the banana cubes to the blender.
  16. 16. Add the reserved apple-lemon mixture to the blender.
  17. 17. Add the ice cubes to the blender.
  18. 18. Blend all ingredients until smooth.
  19. 19. Stir in sparkling water as needed to reach your desired consistency.
  20. 20. Season the mixture with a pinch of salt.
  21. 21. Dice the shallot finely.
  22. 22. Mix the shallot cubes with the remaining apple-cucumber mixture.
  23. 23. Add chopped chives to the mixture and stir them in.
  24. 24. Cut the herring into four bite-sized pieces.
  25. 25. Place each herring piece on a spoon.
  26. 26. Top each herring piece with a little of the apple-cucumber mixture.
  27. 27. Serve the herring spoons alongside the smoothie.
