🍽️ Fresh Apple-Cucumber Smoothie with Herring

Ingredients
- 1 sour apple (e.g. Granny Smith)
- 1 untreated lemon (juice)
- 1 banana
- 1 cucumber
- 10 ice cubes
- soda water (to top up)
- salt
- 1 small shallot
- 1 tsp chive rings
- 1 matjes herring fillet
Instructions
- 1. Peel the apple.
- 2. Cut the apple into four quarters.
- 3. Remove the core from the apple pieces.
- 4. Dice the flesh into small cubes.
- 5. Add the lemon juice to the apple cubes and mix everything.
- 6. Remove two tablespoons of the apple-lemon mixture and set it aside.
- 7. Peel the banana.
- 8. Dice the banana.
- 9. Peel the cucumber.
- 10. Cut the cucumber in half lengthwise.
- 11. Scoop out the seeds from the cucumber halves.
- 12. Dice about two centimeters of the cucumber into small cubes.
- 13. Add the cucumber cubes to the remaining apple pieces.
- 14. Add the rest of the cucumber to the blender.
- 15. Add the banana cubes to the blender.
- 16. Add the reserved apple-lemon mixture to the blender.
- 17. Add the ice cubes to the blender.
- 18. Blend all ingredients until smooth.
- 19. Stir in sparkling water as needed to reach your desired consistency.
- 20. Season the mixture with a pinch of salt.
- 21. Dice the shallot finely.
- 22. Mix the shallot cubes with the remaining apple-cucumber mixture.
- 23. Add chopped chives to the mixture and stir them in.
- 24. Cut the herring into four bite-sized pieces.
- 25. Place each herring piece on a spoon.
- 26. Top each herring piece with a little of the apple-cucumber mixture.
- 27. Serve the herring spoons alongside the smoothie.
