  1. 1. Put 175 grams of flour, 2 tablespoons of sugar, and a pinch of salt into a bowl.
  2. 2. Add the butter in chunks and one egg.
  3. 3. Quickly knead the ingredients into a soft shortcrust dough.
  4. 4. Shape the dough into a ball.
  5. 5. Cover the dough and chill it in the refrigerator for about 30 minutes.
  6. 6. Roughly chop a handful of pecans.
  7. 7. Finely chop the rest of the pecans.
  8. 8. Wash the apples.
  9. 9. Quarter the apples and remove the cores.
  10. 10. Slice the apples thinly.
  11. 11. Drizzle the apple slices with 2 tablespoons of lemon juice.
  12. 12. Separate the remaining egg.
  13. 13. Set the egg yolk aside.
  14. 14. Beat the egg white with 2 tablespoons of sugar, the remaining lemon juice, and 2 tablespoons of honey until stiff.
  15. 15. Stir in the finely chopped nuts, cinnamon, and 15 grams of flour into the egg mixture.
  16. 16. Divide the dough in half.
  17. 17. Dust your work surface with some leftover flour.
  18. 18. Roll out the dough pieces into two circles, each about 5 millimeters thick and 20 centimeters in diameter.
  19. 19. Ensure the edges are neat.
  20. 20. Place the dough circles on a baking sheet lined with parchment paper.
  21. 21. Spread the nut mixture over the dough circles.
  22. 22. Leave a border of about 2 centimeters.
  23. 23. Arrange the apple slices in a fan shape over the nut mixture.
  24. 24. Fold the dough edge over the filling.
  25. 25. Press the dough edge together.
  26. 26. Whisk the egg yolk with cream.
  27. 27. Brush the egg yolk and cream mixture onto the dough edges.
  28. 28. Sprinkle the dough edges with the remaining sugar.
  29. 29. Scatter the roughly chopped nuts over the apple slices.
  30. 30. Preheat the oven to 180 degrees Celsius (convection 160 degrees Celsius; gas: setting 2–3).
  31. 31. Bake the apple galettes for 30 to 35 minutes.
  32. 32. Drizzle the galettes with the remaining honey while still warm or after cooling.
