🍰 Crispy Apple Pecan Galette

Ingredients
- 190 g wheat flour Type 1050
- 1 tbsp wheat flour Type 1050 (for working)
- 75 g raw cane sugar
- 1 pinch salt
- 85 g cold butter
- 2 eggs
- 100 g pecan nuts
- 2 tart apples (e.g. Braeburn, Boskop)
- 3 tbsp lemon juice
- 4 tbsp forest honey
- 1 tsp cinnamon
- 1 tbsp whipping cream (10 g)
Instructions
- 1. Put 175 grams of flour, 2 tablespoons of sugar, and a pinch of salt into a bowl.
- 2. Add the butter in chunks and one egg.
- 3. Quickly knead the ingredients into a soft shortcrust dough.
- 4. Shape the dough into a ball.
- 5. Cover the dough and chill it in the refrigerator for about 30 minutes.
- 6. Roughly chop a handful of pecans.
- 7. Finely chop the rest of the pecans.
- 8. Wash the apples.
- 9. Quarter the apples and remove the cores.
- 10. Slice the apples thinly.
- 11. Drizzle the apple slices with 2 tablespoons of lemon juice.
- 12. Separate the remaining egg.
- 13. Set the egg yolk aside.
- 14. Beat the egg white with 2 tablespoons of sugar, the remaining lemon juice, and 2 tablespoons of honey until stiff.
- 15. Stir in the finely chopped nuts, cinnamon, and 15 grams of flour into the egg mixture.
- 16. Divide the dough in half.
- 17. Dust your work surface with some leftover flour.
- 18. Roll out the dough pieces into two circles, each about 5 millimeters thick and 20 centimeters in diameter.
- 19. Ensure the edges are neat.
- 20. Place the dough circles on a baking sheet lined with parchment paper.
- 21. Spread the nut mixture over the dough circles.
- 22. Leave a border of about 2 centimeters.
- 23. Arrange the apple slices in a fan shape over the nut mixture.
- 24. Fold the dough edge over the filling.
- 25. Press the dough edge together.
- 26. Whisk the egg yolk with cream.
- 27. Brush the egg yolk and cream mixture onto the dough edges.
- 28. Sprinkle the dough edges with the remaining sugar.
- 29. Scatter the roughly chopped nuts over the apple slices.
- 30. Preheat the oven to 180 degrees Celsius (convection 160 degrees Celsius; gas: setting 2–3).
- 31. Bake the apple galettes for 30 to 35 minutes.
- 32. Drizzle the galettes with the remaining honey while still warm or after cooling.
- 33. Enjoy the galettes.
