  1. 1. Wash the apples, cut them into quarters, remove the core, and dice the flesh into small cubes.
  2. 2. Slice the vanilla pod lengthwise, scrape out the seeds, and add both the seeds and the pod to a pot with the apple cubes.
  3. 3. Add the wine, apple juice, and sugar, stir well, and simmer the mixture over medium heat for about 35 minutes. Adjust the time as needed depending on your stove's heat and desired thickness.
  4. 4. Season the chutney with salt and ground nutmeg. Fill it into sterilized jars while hot, seal them, and let them cool down standing on the pot.
