🍳 Apple and Blackberry Jelly

Ingredients
- 1 kg Apples
- 500 g Blackberries
- 0.5 l Water
- 0.25 l White wine
- 5 Juniper berries
- 2 tbsp Honey
- 350 g Pectin sugar (2:1)
- 1 packet Citric acid
Instructions
- 1. Wash the apples thoroughly.
- 2. Remove the core.
- 3. Chop the flesh into small pieces.
- 4. Place the apple pieces in a pot.
- 5. Add the blackberries.
- 6. Pour the water into the pot.
- 7. Pour the wine into the pot.
- 8. Stir in the honey.
- 9. Add the juniper berries.
- 10. Cover the pot.
- 11. Simmer the mixture on low heat for 45 minutes.
- 12. Line a fine mesh sieve with a piece of cheesecloth.
- 13. Hang the sieve over a large bowl.
- 14. Allow the juice to drip through the cloth slowly.
- 15. Gently press the fruit pulp.
- 16. Avoid squeezing too hard.
- 17. Measure exactly 700 milliliters of the juice.
- 18. Stir the jam sugar into the juice.
- 19. Bring the mixture to a boil.
- 20. Let the mixture bubble vigorously for 4 minutes.
- 21. Immediately fill the hot jelly into clean jars.
- 22. Seal the jars tightly.
