🍲 Creamy Apple and Cauliflower Soup

Ingredients
- 300 g cauliflower
- 1 onion (chopped)
- 1 tart apple
- 1 tbsp rapeseed oil
- 0.5 tsp turmeric
- 400 ml vegetable broth
- salt
- pepper (from the mill)
- 1 tbsp sunflower seeds
- 1 tbsp crème fraîche
- 2 tbsp parsley
Instructions
- 1. Wash the cauliflower thoroughly.
- 2. Remove the tough green leaves.
- 3. Break the cauliflower into small florets.
- 4. Use the tough core as well.
- 5. Peel the apple.
- 6. Remove the core.
- 7. Dice the flesh.
- 8. Save one quarter of the apple for later.
- 9. Heat oil in a pot.
- 10. Sauté the cauliflower, apple cubes, and onions briefly.
- 11. Stir in the turmeric.
- 12. Deglaze with the broth.
- 13. Let the soup simmer on low heat for about 15 minutes.
- 14. Heat a pan.
- 15. Toast the sunflower seeds without adding any extra oil.
- 16. Blend the soup until smooth.
- 17. Stir in the crème fraîche.
- 18. Season the soup with salt and pepper.
- 19. Cut the reserved apple quarter into thin strips.
- 20. Garnish the soup with the apple strips.
- 21. Add roughly chopped parsley leaves.
- 22. Sprinkle the toasted sunflower seeds over it.
- 23. Serve the soup.
