  1. 1. Cut the pomegranate in half and remove the seeds, letting the juice collect in a bowl. For the vinaigrette, whisk the pomegranate juice and seeds with lemon juice, honey, and oil. Season the mixture to taste with salt and chili flakes.
  2. 2. Cut the avocados in half and remove the pits. Slice the flesh into thin wedges. Peel the apples, cut them into quarters, and remove the core. Slice the apple flesh into thin wedges as well.
  3. 3. Decoratively arrange the apple and avocado wedges on four plates. Wash the spring onions and shake them dry. Separate the white part from the green part; use the white part for another purpose and slice the green part into thin strips.
  4. 4. Sprinkle the spring onion strips over the salad and drizzle with the vinaigrette.
