  1. 1. Toast the coconut flakes in a non-stick pan over medium heat until fragrant. Remove from the heat and let them cool completely on a plate.
  2. 2. Peel the pineapple carefully with a sharp knife, cut out the tough core, and chop the flesh into coarse cubes.
  3. 3. Cut the papaya in half and remove the seeds with a spoon. Peel the fruit and cut it into coarse cubes. Squeeze the lime to get 2 teaspoons of juice.
  4. 4. Add the pineapple and papaya cubes to a blender along with the soy yogurt alternative, coconut water, lime juice, and 6 to 8 ice cubes. Blend until smooth and garnish the finished smoothie with the cooled coconut flakes.
