  1. 1. Peel the pineapple and carefully remove all the brown eyes. Use a corer to remove the hard core in the center. Cut the fruit into 12 equal slices and arrange them nicely on the plate.
  2. 2. Place the rock sugar and chili pods in a mortar and crush the mixture finely. Sprinkle the sugar evenly over the pineapple and hold a kitchen torch flame briefly underneath until the sugar melts into light brown caramel. Serve the dish immediately.
  3. 3. A scoop of vanilla ice cream is the perfect side dish for this.
