🍽️ Fresh Pineapple and Cucumber Salsa

Ingredients
- 1 fresh pineapple
- 250 g cucumber (0.5 cucumbers)
- 1 bunch spring onions
- 1 small chili pepper
- 3 tbsp apple cider vinegar
- 1 tbsp honey
- salt
Instructions
- 1. Peel the pineapple. Weigh out 400 grams of the flesh, cut it into small cubes, and place them in a bowl.
- 2. Peel the cucumber, cut it in half lengthwise, and scoop out the inside with a spoon. Cut it into small cubes as well and mix it with the pineapple pieces.
- 3. Clean the spring onions, wash them thoroughly, and slice them into thin rings. Stir them into the fruit and vegetable mixture.
- 4. Wash the chili pepper, cut it in half, remove the seeds, and finely chop the flesh. Whisk vinegar, honey, and a pinch of salt together in a small bowl.
- 5. Pour the sauce over the pineapple and cucumber mixture and gently fold it in. Let the salsa rest for 30 minutes to let the flavors meld, then taste and adjust if needed.
