  1. 1. Mix the whole grain spelt flour, spelt flour Type 1050, sugar, and a generous pinch of salt in a large mixing bowl. (It is best to use a food processor with a dough hook or blade.)
  2. 2. Cut the butter into small cubes and add them to the flour mixture. Briefly knead the ingredients into a coarse crumbly dough.
  3. 3. Now add the vinegar and 10 to 12 tablespoons of cold water. Quickly knead everything into a smooth, pliable dough.
  4. 4. Divide the dough into two equal parts, wrap each individually in cling film, and let them rest in the refrigerator for about 2 hours. (You can also prepare the dough up to 2 days in advance.)
  5. 5. Wash the lemon under hot water and dry it. Grate 1 teaspoon of fine zest and squeeze out 1 tablespoon of juice. Mix the remaining sugar, remaining flour, lemon zest, lemon juice, and cinnamon in a large bowl.
  6. 6. Wash the apples, quarter them, peel them, and remove the core. Then slice the apple pieces very thinly.
  7. 7. Mix the apple slices thoroughly with the prepared sugar spice mixture in a bowl.
  8. 8. Roll the dough on a lightly floured work surface into two round sheets, each about 30 cm in diameter.
  9. 9. Line a tart pan (e.g., porcelain, approx. 25 cm diameter; alternatively a springform pan) with one dough circle. Press the dough up the sides so it extends slightly above the rim.
  10. 10. Cut the second dough circle into strips about 2 cm wide using a pizza cutter or dough wheel.
  11. 11. Place the dough strips in a lattice pattern over the apple filling and press them slightly at the edges.
  12. 12. Brush the dough with the milk. Bake the cake in the preheated oven at 180 °C (convection 160 °C; gas level 2–3) for about 70 minutes. Let the cake cool on a wire rack. Serve it lukewarm if desired.
