Ingredients
- 3 egg whites
- 300 g almond kernels
- 3 drops bitter almond flavoring
- 300 g sugar
Instructions
- 1. Whip the egg whites until stiff. Gently fold in the ground almonds, almond oil, and sugar into the egg whites.
- 2. Form walnut-sized balls from the dough, press them slightly flat, and place them on baking sheets lined with parchment paper. Leave enough space, as the cookies spread slightly while baking.
- 3. Bake the cookies in the preheated oven at 160 degrees on the middle rack for about 25 minutes. Remove them, place them on a wire rack, and let them cool completely.
- 4. Serve the amaretti traditionally with a fresh espresso.
