🍽️ Allgäuer Cheese Spätzle

Ingredients
- 400 g flour
- 4 eggs
- 1 pinch freshly ground nutmeg
- 100 ml milk
- salt
- 200 g Emmental cheese
- 2 tbsp melted butter
- 2 onions
- 2 tbsp clarified butter
- 2 tbsp chive rings
Instructions
- 1. Mix flour, eggs, ground nutmeg, milk, and a pinch of salt in a bowl until you have a smooth dough. Gradually add 100 to 150 milliliters of water until the dough is thick enough to drip slowly and heavily from the spoon.
- 2. Let the dough rest for 30 minutes.
- 3. Bring a large pot of plenty of salted water to a boil.
- 4. Meanwhile, grate the cheese finely.
- 5. If necessary, add a little more water to the dough. Portion by portion, push the dough through a spätzle press (a tool for scraping dough pieces) into the boiling salted water and cook for a few minutes. The spätzle are done when they float to the surface.
- 6. Preheat the oven to 100 degrees Celsius with fan (convection).
- 7. Remove the spätzle from the water with a slotted spoon, rinse them briefly with cold water, let them drain, and toss them in melted butter.
- 8. Layer the spätzle alternately with the grated cheese in a pan. Cover the pan and place it in the hot oven until the cheese has melted.
- 9. Slice the onions into thin rings and fry them in hot clarified butter (pure butterfat) until golden brown.
- 10. Sprinkle the cheese spätzle with the fried onions and serve them garnished with chive rolls.
