  1. 1. Peel the ginger and slice it into very thin pieces. Place the slices in a pot, add 500 milliliters of water, and bring the mixture to a boil. Then let the broth simmer gently with the lid on for 10 minutes.
  2. 2. Remove the ginger slices with a slotted spoon and let the liquid cool down. Pour the cold ginger water into ice cube trays and place them in the freezer for about 2 hours until the ice is solid.
  3. 3. Wash the strawberries gently in a bowl of water and let them drain well in a sieve. Remove the green stems, cut the berries into quarters, and place them in a large punch bowl.
  4. 4. Pour the syrup and 350 milliliters of sparkling water over the strawberries. Stir the mixture very gently to avoid crushing the fruit.
  5. 5. Wash the lemon balm, shake off the excess water, and add it to the punch. Place the bowl in the refrigerator with a lid on for at least 30 minutes to let the flavors infuse.
  6. 6. Pour the remaining sparkling water over the strawberries and stir briefly. Add the homemade ginger ice cubes to the punch and serve immediately.
