Ingredients
- 30 g ginger (1 piece)
- 750 g strawberries
- 100 ml elderflower syrup
- 1 sprig lemon balm
- 1.5 l sparkling mineral water (well chilled)
Instructions
- 1. Peel the ginger and slice it into very thin pieces. Place the slices in a pot, add 500 milliliters of water, and bring the mixture to a boil. Then let the broth simmer gently with the lid on for 10 minutes.
- 2. Remove the ginger slices with a slotted spoon and let the liquid cool down. Pour the cold ginger water into ice cube trays and place them in the freezer for about 2 hours until the ice is solid.
- 3. Wash the strawberries gently in a bowl of water and let them drain well in a sieve. Remove the green stems, cut the berries into quarters, and place them in a large punch bowl.
- 4. Pour the syrup and 350 milliliters of sparkling water over the strawberries. Stir the mixture very gently to avoid crushing the fruit.
- 5. Wash the lemon balm, shake off the excess water, and add it to the punch. Place the bowl in the refrigerator with a lid on for at least 30 minutes to let the flavors infuse.
- 6. Pour the remaining sparkling water over the strawberries and stir briefly. Add the homemade ginger ice cubes to the punch and serve immediately.
