🍽️ Filipino Adobo: Chicken and Pork with Rice

Ingredients
- 1 clove garlic
- 2 cm fresh ginger
- 1 red onion
- 80 ml dark soy sauce
- sesame oil
- 1 tsp sweet paprika powder
- 150 ml white wine vinegar
- 400 g chicken drumsticks (ready for cooking)
- 400 g pork fillet (ready for cooking, trimmed)
- 250 g rice
- salt
- 4 bay leaves
- 2 tsp cornstarch
- salt
- pepper (from the mill)
Instructions
- 1. Peel the garlic and the ginger.
- 2. Chop the garlic and ginger very finely.
- 3. Peel the onion.
- 4. Cut the onion into thin strips.
- 5. Place the prepared vegetables into a bowl.
- 6. Add the soy sauce.
- 7. Add three tablespoons of oil.
- 8. Add the paprika powder.
- 9. Add the vinegar.
- 10. Mix the marinade ingredients well.
- 11. Wash the chicken drumsticks and the pork.
- 12. Pat the meat dry with a kitchen towel.
- 13. Cut the pork into small cubes.
- 14. Split the chicken drumsticks at the joints.
- 15. Add the meat to the marinade.
- 16. Mix the meat with the marinade.
- 17. Let the meat marinate for one hour.
- 18. Bring 500 milliliters of water to a boil.
- 19. Salt the boiling water.
- 20. Cook the rice in the boiling salted water.
- 21. Remove the meat from the marinade.
- 22. Let the meat drain.
- 23. Heat a wok.
- 24. Add two tablespoons of oil to the hot wok.
- 25. Sear the meat.
- 26. Sear the meat on all sides.
- 27. Add the remaining marinade to the wok.
- 28. Add 400 milliliters of water.
- 29. Add the bay leaves.
- 30. Simmer the dish for about 15 minutes.
- 31. Cook over medium heat.
- 32. Mix the cornstarch with cold water.
- 33. Stir the cornstarch until smooth.
- 34. Remove the meat from the sauce.
- 35. Keep the meat warm.
- 36. Thicken the sauce with the starch.
- 37. Taste the sauce again.
- 38. Spread the rice on plates.
- 39. Place the meat with the sauce on the rice.
- 40. Garnish the dish with bay leaves.
- 41. Serve the dish.
