🍽️ Eel Skewers with Sage and Lemon

Ingredients
- 600 g fresh eel (skinned and filleted)
- salt
- pepper (from the mill)
- 20 fresh sage leaves
- 1 tbsp hot mustard
- 4 tbsp lemon juice
- 2 tbsp oil
- 8 wooden skewers
Instructions
- 1. Cut the eel into cubes of about 3 centimeters.
- 2. Season the eel pieces generously with salt and pepper.
- 3. Rinse the fresh sage leaves under cold water.
- 4. Gently pat the sage leaves dry with a kitchen towel.
- 5. Switch on the grill function of your oven and preheat it.
- 6. Thread one piece of eel and one sage leaf onto a skewer, alternating them.
- 7. Repeat this until all ingredients are on the skewers.
- 8. Whisk mustard, lemon juice, and oil together in a small bowl to make a sauce.
- 9. Brush the skewers evenly with the mustard-lemon mixture.
- 10. Lightly oil the oven's grill rack.
- 11. Place a catching pan under the rack to collect dripping juice.
- 12. Place the skewers on the oiled rack.
- 13. Grill the skewers for about 8 to 10 minutes.
- 14. Turn the skewers once or twice during the cooking time.
- 15. Slice the bread and toast it in the oven or toaster.
- 16. Brush the warm toasted bread with garlic.
- 17. Serve the hot eel skewers directly with the garlic bread.
