  1. 1. Dice the watermelon flesh into small cubes.
  2. 2. Puree the cubes until smooth.
  3. 3. Add the hot simple syrup, dextrose (simple sugar), lemon juice, and liqueur to the melon puree.
  4. 4. Blend the ingredients until the mixture is smooth.
  5. 5. Place the bowl in the refrigerator until the mixture cools down to 5 to 7 degrees Celsius.
  6. 6. Pour the cold mixture into the ice cream maker.
  7. 7. Run the machine until the sorbet is ready (this takes about 40 minutes).
  8. 8. Repeat steps 1 to 7 for the honeydew melon and the cantaloupe melon.
  9. 9. Omit the liqueur for these two varieties.
  10. 10. Scoop balls out of the finished sorbets with a spoon.
  11. 11. Place the ice balls into glasses.
  12. 12. Serve the glasses according to your personal preference.
