🐙 Simple Octopus Pepper Potato Salad

Ingredients
- 300 g Octopus tentacles (cooked, vacuum-sealed)
- 400 g Waxy potatoes
- 2 Stück Bell peppers (green and red)
- 1 kleine Garlic clove
- 4 EL Olive oil (extra virgin)
- 1 TL Paprika powder (sweet)
- 1 EL White wine vinegar
- 1/2 TL Salt
Instructions
- 1. Wash the potatoes thoroughly and boil them in salted water for 15 minutes until tender.
- 2. Remove the potatoes from the water and cut them into small cubes. Let them cool.
- 3. Wash the peppers, remove seeds and stems, and slice them into thin strips.
- 4. Slice the cooked octopus into thin rounds or small rings.
- 5. Press the garlic through a garlic press or chop it very finely.
- 6. Whisk the olive oil, vinegar, paprika powder, garlic, and salt together in a small bowl to make a dressing.
- 7. Combine the potatoes, peppers, and octopus in a large bowl. Add the dressing and fold everything gently.
- 8. Let the salad sit for 5 minutes to allow the flavors to meld.
- 9. Serve the salad on plates.
