  1. 1. Whisk the egg yolks with sugar in a bowl until creamy.
  2. 2. Gradually stir the mascarpone into the egg yolk-sugar mixture until smooth.
  3. 3. Whip the egg whites in a separate bowl until stiff peaks form, then gently fold them into the mascarpone cream.
  4. 4. Pour the coffee into a shallow dish and add rum if using. Quickly dip the ladyfingers and layer them in a dish.
  5. 5. Spread half of the mascarpone cream evenly over the ladyfingers.
  6. 6. Repeat the layering with the remaining ladyfingers and mascarpone cream.
  7. 7. Dust with cocoa powder before serving and chill in the refrigerator for at least 4 hours.
