  1. 1. Cut the brioche into small cubes. Fry them in a pan with butter until golden brown and crispy. Let them cool and crumble them roughly.
  2. 2. In a bowl, whisk the mascarpone with the milk, icing sugar, and half of the cinnamon powder until smooth.
  3. 3. Lightly beat the eggs. Add a little of the egg mixture to the cream and stir to temper the temperature. Then add the rest and mix gently.
  4. 4. Take 4 clear glasses. Add a layer of crumbled bread, then a layer of the cream. Repeat until the glasses are full.
  5. 5. Sprinkle the top layer with the remaining cinnamon powder. Garnish with the green onions or berries.
  6. 6. Serve the parfait immediately or let it sit in the refrigerator for 5 minutes so the layers stick together slightly.
