🥞 Deconstructed French Toast Parfait

Ingredients
- 200 g Brioche bread (toasted and crumbled)
- 250 g Mascarpone
- 50 ml Whole milk
- 2 Stk Eggs (Size M)
- 30 g Icing sugar
- 1 TL Cinnamon powder
- 2 Stk Green onions (for garnish) or Berries
- 20 g Butter
Instructions
- 1. Cut the brioche into small cubes. Fry them in a pan with butter until golden brown and crispy. Let them cool and crumble them roughly.
- 2. In a bowl, whisk the mascarpone with the milk, icing sugar, and half of the cinnamon powder until smooth.
- 3. Lightly beat the eggs. Add a little of the egg mixture to the cream and stir to temper the temperature. Then add the rest and mix gently.
- 4. Take 4 clear glasses. Add a layer of crumbled bread, then a layer of the cream. Repeat until the glasses are full.
- 5. Sprinkle the top layer with the remaining cinnamon powder. Garnish with the green onions or berries.
- 6. Serve the parfait immediately or let it sit in the refrigerator for 5 minutes so the layers stick together slightly.
