1. Slice the ciabatta bread into eight equal pieces. Brush each slice lightly with olive oil. Place them on the rack and toast them in the preheated oven at 200 degrees Celsius for 6 to 8 minutes until golden brown.
2. Cut the goat cheese rounds in half crosswise so you have two flat halves per piece. Place the cheese halves on the toasted bread slices. Put the tray back in the oven and bake for another 6 to 8 minutes until the cheese is soft and slightly melted.
3. Carefully pick the small lavender flowers off the stems. Cut the chili pepper lengthwise, remove the seeds, and slice the pepper into thin rings. Sprinkle the lavender flowers over the warm cheese. Drizzle the finished bruschettas with lavender honey and serve immediately.
