🥞 Crunchy Caramel Crêpes with Roasted Almonds

Ingredients
- 150 g All-purpose flour
- 300 ml Whole milk
- 3 Stk Eggs (Size M)
- 30 g Butter (melted)
- 40 g Brown sugar
- 20 ml Water
- 50 g Sliced almonds
Instructions
- 1. Mix the flour and brown sugar in a large bowl.
- 2. Pour in half of the milk and whisk until smooth to avoid lumps.
- 3. Add the eggs and whisk further.
- 4. Pour in the remaining milk and melted butter. Stir everything well.
- 5. Let the batter rest for 15 minutes.
- 6. Preheat a non-stick pan over medium heat.
- 7. Pour a small ladle of batter into the pan and swirl it to cover the bottom.
- 8. Cook the crêpe for approx. 2 minutes until edges are golden brown. Flip and cook for 1 minute on the other side.
- 9. Repeat this with the remaining batter.
- 10. Caramelize the sugar with the water in a small pan over medium heat until golden brown.
- 11. Stir the sliced almonds into the hot caramel.
- 12. Fill the crêpes with the almond-caramel mixture and roll them up.
