1. Beat the eggs together with the sugar until the mixture is creamy and airy. Then knead in the ground almonds, the grated lemon zest, and the cinnamon until you have a soft and easily moldable dough.
2. Shape the dough into small balls the size of a walnut. Dip each ball first into the beaten egg yolk and then roll it in the pine nuts. Gently press the balls flat and place them on a baking sheet lined with baking paper.
3. Bake the balls in the preheated oven at 220 degrees Celsius on the middle rack for about 10 minutes.
