  1. 1. Preheat the oven to 200 °C top and bottom heat.
  2. 2. Mix the mayonnaise and mustard in a small bowl until smooth.
  3. 3. Generously spread the mayonnaise mixture on one side of four bread slices.
  4. 4. Layer half of the slices with roast beef and the other half with grated cheese.
  5. 5. Place the remaining four unspread bread slices on top, with the mayonnaise side facing inward.
  6. 6. Spread the remaining mayonnaise mixture on top of each sandwich and sprinkle the remaining cheese over it.
  7. 7. Place the sandwiches on a baking sheet lined with parchment paper.
  8. 8. Bake the sandwiches in the oven for 10 to 12 minutes until the cheese is melted and golden brown.
  9. 9. Remove the sandwiches from the oven and let them cool for 2 minutes before cutting.
  10. 10. Serve the Croque Maduré warm.
