🥗 Croque-Madame Bowl with Mustard Hollandaise

Ingredients
- 300 g Zucchini
- 200 g Mushrooms
- 150 g Grated Gouda cheese
- 4 Stück Eggs
- 30 g Butter
- 20 g Flour
- 150 ml Milk
- 10 g Mustard
- 5 ml Lemon Juice
- 15 ml Olive Oil
- 3 g Salt
- 2 g Pepper
Instructions
- 1. Wash the zucchini and cut it into small cubes. Clean the mushrooms and slice them.
- 2. Heat olive oil in a large pan and fry the mushrooms until golden brown (5 minutes). Remove them from the pan.
- 3. Fry the zucchini cubes in the same pan over high heat until soft but still firm (4 minutes). Season with salt and pepper.
- 4. Melt the butter in a small saucepan. Stir in the flour and cook for 1 minute while stirring (Roux).
- 5. Whisk the milk spoonful by spoonful into the Roux until smooth. Cook the sauce over medium heat until thickened (3 minutes).
- 6. Stir the mustard and lemon juice into the sauce. Remove the saucepan from the heat.
- 7. Divide the vegetables among 4 bowls. Pour the sauce over them and sprinkle the cheese on top.
- 8. Fry the eggs in a separate pan so that the yolk is still runny.
- 9. Place one fried egg on each bowl. Serve immediately.
