  1. 1. Wash the zucchini and cut it into small cubes. Clean the mushrooms and slice them.
  2. 2. Heat olive oil in a large pan and fry the mushrooms until golden brown (5 minutes). Remove them from the pan.
  3. 3. Fry the zucchini cubes in the same pan over high heat until soft but still firm (4 minutes). Season with salt and pepper.
  4. 4. Melt the butter in a small saucepan. Stir in the flour and cook for 1 minute while stirring (Roux).
  5. 5. Whisk the milk spoonful by spoonful into the Roux until smooth. Cook the sauce over medium heat until thickened (3 minutes).
  6. 6. Stir the mustard and lemon juice into the sauce. Remove the saucepan from the heat.
  7. 7. Divide the vegetables among 4 bowls. Pour the sauce over them and sprinkle the cheese on top.
  8. 8. Fry the eggs in a separate pan so that the yolk is still runny.
  9. 9. Place one fried egg on each bowl. Serve immediately.
