🥐 Croissant Bread Pudding with Berries and Lemon

Ingredients
- 4 Stück Butter croissants (day-old)
- 500 ml Whole milk
- 3 Stück Egg yolks
- 75 g Sugar
- 1 TL Vanilla extract
- 1 Stück Lemon (zest)
- 150 g Mixed berries (fresh or frozen)
- 10 g Butter (for greasing)
Instructions
- 1. Preheat the oven to 160 degrees Celsius.
- 2. Grease a baking dish (approx. 20x20 cm) with the butter.
- 3. Cut the croissants into cubes and place them in the baking dish.
- 4. Thoroughly whisk the milk, egg yolks, sugar, vanilla extract, and lemon zest in a bowl.
- 5. Pour the custard mixture evenly over the croissant cubes.
- 6. Press the croissants down slightly with a spoon so they absorb all the liquid.
- 7. Distribute the berries evenly over the top surface.
- 8. Bake the pudding for 35 to 40 minutes until the top is golden brown and the center is set.
- 9. Let the pudding cool for 5 minutes before serving portion-wise on plates.
