Ingredients
- 400g Pork cutlets
- 100g Flour
- 2 Eggs
- 150g Breadcrumbs
- 1 TL Salt
- 1 TL Pepper
- 1 TL Paprika
- 1 EL Lemon juice
Instructions
- 1. Pat the 400 g pork cutlets dry with paper towels. Never wash them, or the breading will get soggy.
- 2. Cut the cutlets into bite-sized strips, about 3 cm thick. This helps them cook evenly.
- 3. Put the 100 g flour in a shallow dish. Sprinkle in 1 tsp salt, 1 tsp pepper, and 1 tsp paprika. Mix the spices well into the flour.
- 4. Crack the 2 eggs into a second dish. Whisk them vigorously with a fork until they are smooth.
- 5. Pour the 150 g breadcrumbs into a third dish. Have it ready before you touch the meat.
- 6. Dip the meat strips one by one in the seasoned flour mixture. Shake off any excess flour firmly.
- 7. Dip the floured strips completely into the egg mixture. Let them drip briefly so the breading sticks.
- 8. Press the wet strips firmly into the breadcrumbs. Turn them until they are completely coated.
- 9. Preheat the air fryer to 200 °C. This takes about 3 minutes. Air fryers need preheating for crispiness.
- 10. Place the breaded cutlets in the basket. Arrange them side by side, not on top of each other, for even heat.
- 11. Cook the cutlets at 200 °C for 10 minutes. Flip them halfway through. The surface will start to become firm and light golden brown.
- 12. Remove the cutlets and let them rest on a plate for 3 minutes. This allows the juices to redistribute.
- 13. Drizzle the warm cutlets with 1 tbsp lemon juice. The acidity enhances the flavor of the breading.
- 14. Serve the cutlets immediately. They are perfect when the breading is crispy and the meat remains juicy.
