1. Rinse the parsley under running water. Pluck the small leaves from the stems and gently pat them dry with a kitchen towel.
2. Put the flour and cornstarch into a bowl. Season with a pinch of salt, add the wine, and stir in as much cold water (approx. 150 ml) as needed until a thick batter forms.
3. Dip the parsley leaves into the batter, let the excess drip off, and fry them in batches in hot oil (approx. 170°C) for about 1 minute until crispy. Place them on kitchen paper to absorb the oil.
