100 g mixed herbs (e.g. mint, chervil, arugula, burnet)
4 tbsp cream cheese
1 tbsp whipping cream (at least 30% fat content)
salt
pepper (from the mill)
1 tbsp black sesame seeds
1 tsp chili flakes
2 tbsp olive oil
Instructions
1. Preheat your oven to 240 degrees Celsius using top and bottom heat.
2. Mix the flour with the salt in a bowl.
3. Whisk 5 tablespoons of lukewarm water with the milk.
4. Pour the liquid into the flour and knead everything with the beaters of your electric hand mixer for about 10 minutes until you have a smooth dough.
5. Adjust the consistency of the dough as needed with a little more flour or water.
6. Roll the dough out thinly.
7. Place the dough on a baking tray lined with baking paper.
8. Bake the flatbread in the preheated oven for about 10 minutes until golden brown.
9. Wash the herbs and shake off excess water.
10. Pluck the leaves from the stems.
11. Whisk the cream cheese with the cream until smooth.
12. Remove the flatbread from the oven.
13. Break the bread into pieces or cut it.
14. Spread the cream cheese mixture over the bread.
15. Distribute the herb leaves on top.
16. Season with freshly ground pepper and salt.
17. Sprinkle the bread with sesame seeds and chili flakes.
18. Drizzle it with olive oil.
19. Serve the flatbread.
