  1. 1. Pat 500 g chicken wings dry with paper towels. Never wash them, or the coating will get soggy.
  2. 2. Put the wings in a large bowl and pour 200 ml buttermilk over them.
  3. 3. Sprinkle 1 tsp salt, 1 tsp pepper, and 1 tsp garlic powder on top.
  4. 4. Toss the wings well in the marinade, cover the bowl, and refrigerate for 30 min.
  5. 5. Take the bowl out of the fridge and preheat the air fryer to 180 °C.
  6. 6. Put 100 g cornstarch in a shallow dish or large bag.
  7. 7. Take the wings out of the buttermilk and let them drip briefly. Don't rinse them.
  8. 8. Coat each wing individually in the cornstarch until it’s completely white.
  9. 9. Firmly shake off any excess starch from each wing. Too much starch burns quickly.
  10. 10. Place the coated wings in the air fryer basket. Make sure they don’t touch.
  11. 11. Cook the wings at 180 °C for 20 min, until they are golden brown.
  12. 12. Open the basket and flip each wing with tongs. The first side will now be pale.
  13. 13. Close the basket and cook the wings for another 10 min at 180 °C.
  14. 14. Check for crispness: The coating should be golden brown and hard, not soft.
  15. 15. Take the wings out and let them rest on a rack for 2 min so they don’t get soggy.
  16. 16. Arrange the wings on a plate. They’re perfect when the coating cracks when you bite into them.
