  1. 1. Pat the 500 g chicken wings dry with paper towels. Never wash them, or the fat will splatter later.
  2. 2. Put the wings in a large bowl and pour 200 ml buttermilk over them.
  3. 3. Let the wings marinate in the fridge for at least 30 minutes. This tenderizes the meat.
  4. 4. In a second bowl, mix 100 g flour with 1 tsp salt, pepper, garlic powder, and paprika.
  5. 5. Preheat the air fryer to 200 °C. It takes about 3 minutes to heat up.
  6. 6. Take the wings out of the buttermilk and coat them in the flour mixture, pressing to adhere. Shake off any excess flour.
  7. 7. Place the coated wings in the basket in a single layer. Don't stack them, or they'll get soggy.
  8. 8. Drizzle 2 tbsp olive oil evenly over the wings. This gives them a golden color.
  9. 9. Fry the wings at 200 °C for 20 minutes. Flip them firmly after 10 minutes, until they are lightly browned.
  10. 10. Reduce the temperature to 180 °C and fry for another 10 minutes, until the coating is golden brown and crispy.
  11. 11. Remove the wings and let them rest on a rack for 5 minutes. This keeps the coating crispy.
  12. 12. Serve the wings immediately. They're perfect when the coating cracks and the meat stays juicy.
