  1. 1. Preheat the air fryer to 180 °C. This takes about 3 minutes.
  2. 2. Pat the 2 chicken cutlets dry with paper towels. Never wash them, as this spreads germs.
  3. 3. Crack the egg into a shallow bowl and whisk it lightly with a fork.
  4. 4. Mix the 100 g panko breadcrumbs with 1 teaspoon salt and 1 teaspoon pepper in a second bowl.
  5. 5. Dip one chicken cutlet first into the egg mixture. Turn it so it’s wet all over.
  6. 6. Press the wet cutlet firmly into the panko mixture. Make sure you have a thick, even coating.
  7. 7. Gently shake off any excess panko mixture. It should stick, but not be dusty.
  8. 8. Repeat steps 5 to 7 with the second chicken cutlet. Set it aside.
  9. 9. Place the breaded cutlets in the basket of the air fryer. Make sure they don’t touch.
  10. 10. Drizzle the cutlets with 1 tablespoon olive oil. This ensures a nice browning and crispiness.
  11. 11. Cook the cutlets at 180 °C for 10 minutes, flipping them halfway through until the surface is golden brown.
  12. 12. Check the cooking time: The meat should be cooked through inside and golden brown and crispy outside.
  13. 13. Remove the cutlets and let them rest on a plate for 3 minutes. This keeps the juices inside.
  14. 14. Serve the cutlets immediately. It’s perfect when the breading crackles when you bite into it.
