🍽️ Crispy Chicken Schnitzel for Kids

Ingredients
- 200g Chicken Breast Fillet
- 100g Panko Breadcrumbs
- 1 Egg
- 1 TL Salt
- 1 TL Pepper
- 1 EL Lemon Juice
Instructions
- 1. Cut the 200 g chicken breast fillet into roughly 3 cm cubes. Important: Pat the meat dry, don't wash it under water.
- 2. Put 1 tsp salt and 1 tsp pepper into a small bowl. Season the chicken cubes with it and let them rest for 5 minutes.
- 3. Whisk the egg in a second, shallow bowl. Add 1 tbsp lemon juice and stir it in.
- 4. Pour the 100 g panko breadcrumbs into a third, shallow bowl. Have it ready for quick breading.
- 5. Dip each chicken cube one by one first into the egg-lemon mixture. Briefly let excess batter drip off.
- 6. Coat the wet cubes in the panko breadcrumbs. Press the coating firmly onto the chicken so it doesn't fall off during frying.
- 7. Place the breaded cubes in the basket of the air fryer. Make sure they don't touch for extra crispiness.
- 8. Spray the chicken cubes generously with cooking spray or brush them with oil. Without fat, the panko will be dry and hard.
- 9. Preheat the air fryer to 200 °C. This takes about 3 minutes to reach the target temperature.
- 10. Cook the chicken cubes at 200 °C for 10 minutes. Flip the pieces after 5 minutes for even browning.
- 11. Check for doneness: Cut into one piece. The meat must be white, with no pink remaining (minimum 75 °C core temperature).
- 12. Remove the cubes and let them rest in the basket for 2 minutes. This redistributes the juices and keeps the crust crispy.
- 13. Serve the crispy chicken cubes hot. The dish is perfect when the coating is golden brown and crackles when you bite into it.
