1. Wash the apples thoroughly and pat them dry. Cut them into quarters and remove the core. Use a vegetable slicer (a tool for cutting thin slices) to cut the apple pieces into paper-thin rings.
2. Line a baking sheet with baking paper and arrange the apple slices on it. Place the tray in the preheated oven on the middle rack. Keep the oven door slightly ajar using a wooden spoon and dry the apples at 60 °C (Fan: 40 °C, Gas: Mark 1) for about 2 hours.
3. Finely chop the chocolate. Remove the apple chips from the oven, sprinkle them with the chocolate, and put them back in the oven. Melt the chocolate at 80 °C (Fan: 60 °C, Gas: Mark 1).
4. Turn off the oven and let the apple chips cool down inside it slowly. Serve about one quarter of them immediately as a snack. Store the rest in a jar and consume it within the next 4 days.
