1. Clean the mushrooms with a damp cloth or a brush. Avoid rinsing them under running water, as they will absorb too much moisture. Cut large mushrooms in half or quarters. Leave small mushrooms whole.
2. Prepare three separate bowls. Fill the first bowl with flour. Whisk the egg in the second bowl. Place the breadcrumbs in the third bowl. Season the breadcrumbs with paprika powder, garlic powder, salt, and pepper. Mix the spices thoroughly into the breadcrumbs.
3. Coat each mushroom first in the bowl with flour. Then dip it into the egg mixture. Finally, roll the mushroom in the seasoned breadcrumbs until fully covered. Lightly spray the breaded mushrooms with oil to achieve extra crispiness.
4. Preheat the air fryer to 180 °C. Place the mushrooms evenly in the basket. Ensure the mushrooms do not overlap. Cook the mushrooms at 180 °C for 12 minutes. Gently shake the basket after 6 minutes to ensure even crispiness.
5. Let the mushrooms cool down briefly. This will make the coating even firmer. Serve the mushrooms with herb quark, aioli, or simply on their own.
