🥞 Salted Caramel and Chocolate Crêpes

Ingredients
- 150 g All-purpose flour (Type 405)
- 300 ml Milk
- 3 Stk Eggs (Size M)
- 30 g Butter (melted)
- 20 g Sugar (for batter)
- 60 g Sugar (for filling)
- 60 ml Heavy cream (30% fat)
- 1 Prise Sea salt
- 100 g Dark chocolate (grated)
Instructions
- 1. Mix flour, sugar, and salt in a large bowl.
- 2. Pour in half the milk and whisk until smooth to avoid lumps.
- 3. Add the eggs and beat them well into the mixture.
- 4. Pour in the remaining milk and melted butter. Stir until smooth.
- 5. Let the batter rest for 15 minutes.
- 6. Heat some butter in a non-stick pan over medium heat.
- 7. Pour a ladle of batter into the pan and swirl it to cover the bottom.
- 8. Cook the crêpe for approx. 1-2 minutes per side until golden brown.
- 9. Repeat with the remaining batter.
- 10. For the caramel: Put 60g sugar in a dry pan and heat over medium heat without stirring until it melts and turns amber colored.
- 11. Carefully add the cream (it will splash!). Stir quickly.
- 12. Remove the pan from the heat and stir in the salt.
- 13. Spread each crêpe with some caramel and sprinkle chocolate on top.
- 14. Fold the crêpes and serve them warm.
