  1. 1. Mix flour, sugar, and salt in a large bowl.
  2. 2. Pour in half the milk and whisk until smooth to avoid lumps.
  3. 3. Add the eggs and beat them well into the mixture.
  4. 4. Pour in the remaining milk and melted butter. Stir until smooth.
  5. 5. Let the batter rest for 15 minutes.
  6. 6. Heat some butter in a non-stick pan over medium heat.
  7. 7. Pour a ladle of batter into the pan and swirl it to cover the bottom.
  8. 8. Cook the crêpe for approx. 1-2 minutes per side until golden brown.
  9. 9. Repeat with the remaining batter.
  10. 10. For the caramel: Put 60g sugar in a dry pan and heat over medium heat without stirring until it melts and turns amber colored.
  11. 11. Carefully add the cream (it will splash!). Stir quickly.
  12. 12. Remove the pan from the heat and stir in the salt.
  13. 13. Spread each crêpe with some caramel and sprinkle chocolate on top.
  14. 14. Fold the crêpes and serve them warm.
