🧀 Savory Crêpes with Blue Cheese and Walnuts

Ingredients
- 125 g All-purpose flour
- 3 Stück Eggs
- 250 ml Whole milk
- 20 g Butter (melted)
- 80 g Blue cheese (e.g., Gorgonzola)
- 40 g Walnut kernels (toasted)
- 1 Prise Salt
- 1 Prise Black pepper
Instructions
- 1. Whisk the flour, eggs, milk, and melted butter together in a bowl until you have a smooth batter.
- 2. Let the batter rest for 15 minutes to relax the gluten.
- 3. Heat a non-stick pan over medium heat and lightly grease it with a little butter.
- 4. Pour a ladle of batter into the pan and swirl it around to spread it thinly.
- 5. Cook the crêpe for about 2 minutes until the edges lift, flip it, and cook for another 1 minute.
- 6. Stack the cooked crêpes and roll them up.
- 7. Chop the toasted walnuts roughly and crumble the blue cheese.
- 8. Fill the crêpes with the cheese and walnut mixture and roll them tightly.
- 9. Place the filled crêpes back into the hot pan and brown them on both sides for 2 minutes.
- 10. Season with salt and pepper and serve immediately.
