🥣 Creamy Leek Soup with Croutons

Ingredients
- 300 g Leeks
- 200 g Potatoes
- 1 Stk Onion
- 20 g Butter
- 500 ml Vegetable broth
- 50 ml Cream (10%)
- 5 g Salt
- 1 g Nutmeg
- 50 g Baguette
- 10 ml Olive oil
Instructions
- 1. Wash the leek thoroughly, slice into thin rings, and separate the white from the green parts.
- 2. Peel the potatoes and cut them into small cubes.
- 3. Finely dice the onion.
- 4. Melt the butter in a pot and sauté the onions and the white part of the leek until translucent (approx. 5 minutes).
- 5. Add the potato cubes and deglaze with the vegetable broth.
- 6. Simmer the soup over medium heat for approx. 15 minutes until the potatoes are soft.
- 7. Puree the soup until smooth with an immersion blender.
- 8. Stir in the cream and season with salt and nutmeg.
- 9. Cut the baguette into cubes and fry them in olive oil until crispy for the croutons.
- 10. Serve the hot soup with the croutons.
