  1. 1. Wash the leek thoroughly, slice into thin rings, and separate the white from the green parts.
  2. 2. Peel the potatoes and cut them into small cubes.
  3. 3. Finely dice the onion.
  4. 4. Melt the butter in a pot and sauté the onions and the white part of the leek until translucent (approx. 5 minutes).
  5. 5. Add the potato cubes and deglaze with the vegetable broth.
  6. 6. Simmer the soup over medium heat for approx. 15 minutes until the potatoes are soft.
  7. 7. Puree the soup until smooth with an immersion blender.
  8. 8. Stir in the cream and season with salt and nutmeg.
  9. 9. Cut the baguette into cubes and fry them in olive oil until crispy for the croutons.
  10. 10. Serve the hot soup with the croutons.
