🍚 Melting Rice with Saffron and Pine Nuts

Ingredients
- 100 g Short-grain rice (e.g., Bomba or Arborio)
- 250 ml Vegetable broth
- 1 Zehe Garlic
- 1 g Saffron threads
- 15 g Pine nuts
- 15 ml Olive oil
- 5 ml Lemon juice
- 5 g Parsley
Instructions
- 1. Heat the oil in a small pan and toast the pine nuts until golden brown. Remove them and set aside.
- 2. Add the rice to the pan and toast for 1 minute. Pour the saffron into the warm broth and stir both into the rice. Cooking time approx. 1 minute.
- 3. Reduce the heat, cover the pan, and let the rice simmer for 18 minutes until the liquid is absorbed.
- 4. Remove the pan from the heat. Press the garlic clove over the rice and stir in the lemon juice and parsley. Cover the pan for 5 minutes to let the rice rest. Resting time 5 minutes.
- 5. Serve the rice in small bowls, garnished with the toasted pine nuts.
