  1. 1. Heat the oil in a small pan and toast the pine nuts until golden brown. Remove them and set aside.
  2. 2. Add the rice to the pan and toast for 1 minute. Pour the saffron into the warm broth and stir both into the rice. Cooking time approx. 1 minute.
  3. 3. Reduce the heat, cover the pan, and let the rice simmer for 18 minutes until the liquid is absorbed.
  4. 4. Remove the pan from the heat. Press the garlic clove over the rice and stir in the lemon juice and parsley. Cover the pan for 5 minutes to let the rice rest. Resting time 5 minutes.
  5. 5. Serve the rice in small bowls, garnished with the toasted pine nuts.
