🍟 Quick Crème-Fries & Medallions

Ingredients
- 600 g Waxy potatoes (for boiling)
- 400 g Beef fillet (or steak)
- 150 ml Heavy cream (30% fat)
- 50 g Gorgonzola or blue cheese
- 3 Stk Shallots
- 20 g Butter
- 2 EL Olive oil
- 1 Prise Salt
- 1 Prise Pepper (freshly ground)
- 1 Bund Parsley (fresh)
Instructions
- 1. Peel the potatoes and cut them into long strips (fries shape).
- 2. Place the potato strips in cold salted water and let them sit for 10 minutes.
- 3. Finely chop the shallots and cut the meat into 4 equal medallions.
- 4. Fry the potatoes in plenty of oil in the pan until crisp and golden brown (approx. 12 minutes).
- 5. Remove the potatoes and keep them warm in the oven at 80 degrees.
- 6. Sear the medallions in the same pan over high heat, approx. 2 minutes per side.
- 7. Remove the meat and let it rest for 3 minutes.
- 8. Melt the butter in the pan and sauté the shallots until translucent.
- 9. Reduce the heat, add the cream and Gorgonzola, and stir until a sauce forms.
- 10. Season the sauce with salt and pepper and serve everything together.
