  1. 1. Peel the potatoes and cut them into long strips (fries shape).
  2. 2. Place the potato strips in cold salted water and let them sit for 10 minutes.
  3. 3. Finely chop the shallots and cut the meat into 4 equal medallions.
  4. 4. Fry the potatoes in plenty of oil in the pan until crisp and golden brown (approx. 12 minutes).
  5. 5. Remove the potatoes and keep them warm in the oven at 80 degrees.
  6. 6. Sear the medallions in the same pan over high heat, approx. 2 minutes per side.
  7. 7. Remove the meat and let it rest for 3 minutes.
  8. 8. Melt the butter in the pan and sauté the shallots until translucent.
  9. 9. Reduce the heat, add the cream and Gorgonzola, and stir until a sauce forms.
  10. 10. Season the sauce with salt and pepper and serve everything together.
