  2. 2. Beat egg yolks with the remaining sugar until frothy.
  3. 3. Slowly pour the hot cream into the egg yolks, stirring well.
  4. 4. Pour the mixture into molds and bake in a water bath at 160°C for about 30 minutes.
  5. 5. Let cool, then sprinkle with brown sugar and caramelize.
