  1. 1. Place the milk, lemon zest, cinnamon stick, and half of the sugar in a pot and heat slowly to a boil.
  2. 2. Whisk the egg yolks, remaining sugar, and cornstarch smoothly in a separate bowl.
  3. 3. Remove the pot from the heat. Remove the lemon zest and cinnamon stick. Slowly stir a little of the hot milk into the egg mixture to temper it.
  4. 4. Pour the egg mixture back into the pot with the remaining milk and heat while stirring constantly until the cream thickens.
  5. 5. Pour the cream into four small ramekins and let them cool at room temperature. Cover them and refrigerate for at least 4 hours.
  6. 6. Set the oven grill function (or a kitchen torch). Sprinkle each cream evenly with the brown sugar.
  7. 7. Caramelize the sugar until it is golden brown and crispy. Let the cream rest briefly before serving so the caramel layer hardens.
