🍮 Simple Crema Catalana

Ingredients
- 500 ml Whole milk
- 4 Stk. Egg yolks
- 100 g Sugar
- 1 Stk. Lemon zest
- 1 Stk. Cinnamon stick
- 15 g Cornstarch
- 20 g Brown sugar for caramelizing
Instructions
- 1. Place the milk, lemon zest, cinnamon stick, and half of the sugar in a pot and heat slowly to a boil.
- 2. Whisk the egg yolks, remaining sugar, and cornstarch smoothly in a separate bowl.
- 3. Remove the pot from the heat. Remove the lemon zest and cinnamon stick. Slowly stir a little of the hot milk into the egg mixture to temper it.
- 4. Pour the egg mixture back into the pot with the remaining milk and heat while stirring constantly until the cream thickens.
- 5. Pour the cream into four small ramekins and let them cool at room temperature. Cover them and refrigerate for at least 4 hours.
- 6. Set the oven grill function (or a kitchen torch). Sprinkle each cream evenly with the brown sugar.
- 7. Caramelize the sugar until it is golden brown and crispy. Let the cream rest briefly before serving so the caramel layer hardens.
