🍮 Simple Crema Catalana

Ingredients
- 500 ml Whole milk
- 80 g Sugar
- 25 g Corn starch
- 1 Stück Lemon (peeled)
- 1 Stück Cinnamon stick
- 1 EL Coconut oil (for brushing)
Instructions
- 1. Heat milk, 50 g sugar, lemon peel, and cinnamon stick in a pot almost to boiling.
- 2. Remove the pot from the heat. Remove lemon peel and cinnamon stick.
- 3. Mix corn starch with the remaining 30 g sugar. Stir a small amount of warm milk into the starch until a smooth paste forms.
- 4. Pour the starch-milk paste into the pot. Keep stirring until the cream thickens.
- 5. Fill the hot cream into 4 small molds. Let them cool in the refrigerator for at least 4 hours.
- 6. Brush a thin layer of coconut oil on top of the cream. Sprinkle a thin layer of sugar on top.
- 7. Brown the sugar with a kitchen torch. Let the cream stay cold for 5 minutes before eating.
