  1. 1. Heat the milk with the lemon zest and cinnamon stick in a pot until it steams slightly. Remove the pot from the heat and let the flavors infuse for 15 minutes.
  2. 2. Whisk the egg yolks with 50 g of sugar and the cornstarch in a bowl until smooth.
  3. 3. Strain the warm milk and pour it slowly into the egg mixture while whisking constantly.
  4. 4. Return the mixture to the pot and heat it over medium heat until it thickens. Stir constantly.
  5. 5. Fill the cream into 4 small ramekins and let it cool at room temperature. Cover them and refrigerate for at least 2 hours.
  6. 6. Evenly sprinkle each cream with the brown sugar. Caramelize the sugar with a kitchen torch until it is golden brown and crispy.
