🍮 Simple Crema Catalana

Ingredients
- 500 ml Whole milk
- 4 Stk Egg yolks
- 100 g Sugar
- 1 Stk Lemon zest
- 1 Stk Cinnamon stick
- 20 g Cornstarch
- 20 g Brown sugar
Instructions
- 1. Heat the milk with the lemon zest and cinnamon stick in a pot until it steams slightly. Remove the pot from the heat and let the flavors infuse for 15 minutes.
- 2. Whisk the egg yolks with 50 g of sugar and the cornstarch in a bowl until smooth.
- 3. Strain the warm milk and pour it slowly into the egg mixture while whisking constantly.
- 4. Return the mixture to the pot and heat it over medium heat until it thickens. Stir constantly.
- 5. Fill the cream into 4 small ramekins and let it cool at room temperature. Cover them and refrigerate for at least 2 hours.
- 6. Evenly sprinkle each cream with the brown sugar. Caramelize the sugar with a kitchen torch until it is golden brown and crispy.
